"Salsa Smalsa"

"Salsa Smalsa"
When I create Mexican night for hubby, I prepared burritos with my homemade salsa. We no longer purchase the brands in the store, He is not wild about cilantro and some of the other herbs so I had to come up with one he likes.

The plate you see is one I created when I was in my pottery phase during 1996-98.

Well if you are interested in my recipe... here goes!
Make this a few hours ahead of time or the night before.

"Salsa Smalsa"
3 large size ripe tomatoes (cut into cubes) I lay the cubes on some paper towels in a strainer, lay a paper towel on top of them and press gently. You want to get some moisture out of the tomatoes. I let them sit in the strainer for 30 minutes or more while I am getting the rest of the ingredients together. The longer the better.

1/2 cup of can tomato sauce.
1/2 cup of "La Preferida Mild Jalapeño Nacho Slices" ( chop the slices into cubes)
1/4 cup of "La Preferida Hot Jalapeño Nacho Slices" ( chop the slices into cubes)
1 Whole med size red onion (shopped)
2-3 cloves of garlic, its to your liking. (mince the garlic into fine pieces)
1/4 Cup of sliced black olives.
1/4 teaspoon Basel and Oregano.
1/4 teaspoon sugar or a pinch more.
A dash of chili powder.
Salt and pepper to taste ( you may leave this one off)

Okay, mix all these ingredients together in a microwave safe dish. I have a small 800 watt microwave so you may need to lower the time if your microwave wattage is higher. You are going to microwave this mixture 1 minute at a time for a total of 3 minutes, removing it from the microwave after each minute to stir. You want it to get warm but not boiling hot. The idea is to wilt slightly the tomatoes, garlic, jalapeño and onions and to melt the sugar. Let it sit and cool so the flavors can blend.

When you are ready, grab your favorite chips and dig in. For us; I cut up small flour tortillas into triangles, toast in a preheated 375 degree oven on a baking sheet till slightly toasted and crisp. This cuts down on all the salt and fats you get in the bag corn chips.



We love these "La Preferida Mild Jalapeño Nacho Slices" ........... OH YUM!!! the Mild ones can be eaten right of the jar and your mouth never is on fire. You get all the jalapeño flavor but none of the heat. I use them on so many things. When we want a little fire we get the "Hot" jar and mix some in with the Mild.

Tammy, I love your header and the prose about how you begin your day. How lovely...I still have your e-mail printed out and refer to it often. It's been a weird week and I had intentions of getting back to you but my son has been sick so I've been home with him and trying to juggle things at school and a good friend and colleague from the school I taught with in Ohio passed away suddenly on Wed. and gosh, when it rains...
