Baked Scallops With Herbs

I wanted to cook something yummy for honeyman in thanks for the new waffle iron. We had some scallops in the freezer, I thought that would truly be a special meal. Scallops I can do,  easy as taking off my shoes. As I mention in the past, I am no super cook.

Pre heat the oven 450. I like to use my small convection counter top
 oven rather than heating up the big gas oven.

While heating up the oven, I melt some unsalted butter, mix the butter with some light
 olive oil, add some of my herb blend of dill, chive and garlic.
I bathed the thawed scallops in the butter-oil for about 15 minutes to
get them nicely coated with the mixture.

The reason I use unsalted butter is the
Parmesan-Romano cheese taste salty to me.
Also the scallops have their own natural salt from the sea.
Right before they go in the oven I sprinkle on Wheat Germ and a dusting
 of Parmesan-Romano cheese then into the oven for 8-10 minutes till bubbly.

Adding a side salad and some smashed red baby new potatoes,
its a meal fit for a king.

 When I cook mine I do not use butter but just a dash of olive oil. So you all can opt for just light olive oil instead of the butter and save a few arteries.

Yum! I've never thought to add wheat germ as a topping for seafood but what a delicious coating it seems to make. I'm going to make this dish. I think I'm too far away for honeyman to sense what I'm doing but he'd be most welcome--you, too! NOTE: Your herb and spice mix makes everything I use it on taste better!!

We get the wild salmon from Costco as well. Delicious! They also have a canned wild salmon that we like.

NOW I know what I can make for dinner tonight! I love seafood so that looks yummy!

Also, yes, that is a walking doll in the photo of my sister and me. My grandparents gave us these dolls and for the longest time, we kept them at my grandparents house in the box; which to me looked like the dolls were in a coffin. It freaked me out!

That is gorgeous! I have to tell you, I've never met a scallop I liked, but I'd be tempted to taste of those! He's a lucky guy who knows how to be in the 'right place' at the 'right time'.

Oh that looks absolutely delicious, but... My hubby is allergic to scallops, so we don't get to eat them. He loves them, but they don't love him!!! I wonder if you could do that with something other than scallops. Looks like your honeyman ate good that night!

I really hate to admit this.... but... this girl (69 1/2 yrs young).... has NEVER cooked a scallop, but after reading your recipe.... I'm ready! The meal looks and sounds so delicious!
