This is so simple to make, I love things that are simple as I am a busy kinda' gal.........HA!~! its because I am challenged in the kitchen in some aspects.
I use 2 bags of the grated cheese depending on how much we will eat during the week. You can grate your own cheese and/or add different kinds of cheese too. I have even used the Mexican blend grated cheese along with 1 bag sharp.
For this particular recipe I used 1 bag sharp cheddar and 1 bag white cheddar.
Place grated cheese in a bowl and add mayo to your liking along with chopped pimentos and 10 slices of jalapeño peppers chopped..... see jar photo at the end of this post. Add a bit less than a 1/2 teaspoon sugar, it brings of the flavor, cant explain it but it does. If you want to add salt you can but I tend to leave that off. If you want more of a kick you can add a dash of red pepper. Mix up and let sit in the frig overnight so the flavors have a chance to get to know one another. Then serve it with whatever... Its even great smathered on a burger....
We like to have it with toasted English muffins. I like to cut them with a cookie cutter kinda' to make them look like scones or just to make them more uniformed, then pop then in the toaster.
Serve with coffee or hot tea, anything is okay.
Now to the good part.
I am in love with these peppers, If you can find them get a jar and try them. I am not one for very hot spicy peppers and these are SO PERFECT. You get all the flavor of the Jalapeño pepper but very little heat when you buy the "Mild" one. I eat them like candy, that is how mild they are. Your mouth will never be on fire and you will not perspire (as the south would say) when you eat the mild ones. I don't know what they did to get rid of the heat as they still have the seeds and I read that is where the heat is but these don't have heat.
I put them in chicken salad and eat them with baked chicken, salmon, mix them in with meatloaf.... the choices are endless.

What a lovely set up...I love seeing the tea pot and the presentation of the food. I'm not a jalpeno fan; in fact watching someone eat them makes my mouth hot...
